Wednesday, August 17 - Lunch
Jumbo Post 4th session 2011
There has been much to blog about but little time to do it. Since late Saturday night we have all been embroiled in Country Fair madness. Throw in the first full day of rain on Monday, and you have some intense days (or is it daze?). I'll do some summarizing with a few photos, and hopefully we'll get caught up at lunch. Sunday breakfast and lunch were standard fare: scrambled eggs and toast, and cold cuts. Then, enter the madness.
(A quick note on why the kitchen, too, has been consumed by Country Fair. Many moons ago the food at Camp Billings had its faults and we'll leave it at that. With Country Fair, however, there was a push to goad the cooks into raising the bar at least a little bit. The kids were running around non-stop and needed sustenance that matched their competitive fervor. So a little tradition was started of amping up the food. In my tenure, however, it has posed a slight challenge to amp up already amped up food. But, in the spirit of a plaque that hangs in the dining hall: anything worth doing is worth doing well)
I give you Country Fair Food 2011 - sorry there aren't pictures of everything
Sunday Dinner
Fried chicken
VT grass-fed steaks
Baked potato
Cole slaw
Corn bread
Mushroom risotto for vegetarians
Sundae bar for dessert
Monday Breakfast
Waffle bar - there are pictures of this from last year's Country Fair. We omitted the ice cream this year.
Monday Lunch
Chicken Caesar salad
Fettuccine Alfredo
Breadsticks
Monday Dinner
Ribs - best ribs ever. We started them in the oven at 9:00 am and then finished them on the grill
Potato wedges
Corn
Salad
Pie bar
Tuesday Breakfast
Blueberry pancakes
Sausage
Tuesday Lunch
Very similar to last year's TGIFriday's basket of goodness:
Jalapeno poppers
Chicken tenders
Mozzarella sticks
Chips
AND - an entire Colatina Italian loaf filled with cheese sauce for the table!
Tuesday Dinner
Turkey dinner
Homemade banana bread
My favorite dessert of the year: chocolate chocolate chip cookie sandwiches with mint chocolate chip ice cream
Wednesday Breakfast
Cereal bar - Coco Puffs, Froot Loops, Captain Crunch, Golden Grahams

Chive cream cheese - it is at this point in the summer I really try to add some special things for the staff. They've basically been eating the same food for the past 5 weeks. While it is all good food, it does get a little repetitive over the course of the summer.

Sunday, July 31 - Lunch
Fritos
Veggie sticks
It would be great if any psychologist out there would tell me why, when we send out 8 grilled cheeses for seconds, we rarely send out any more sandwiches at all after that. But, if we were to give out only 4 or 6 there would be a mad rush for thirds and fourths. It is weird, and I could use some answers.

Wednesday, July 20 - International Dinner
Potstickers
Cream of broccoli soup
Mixed greens salad from Crossroad Farm
Indian extravaganza:
Tandoor chicken

Three chunties - tamarind, onion, mint
Saag aloo

I really don't know what to say about preparing a five-course meal for 250 of my closest friends. I really appreciate all the help, especially Valery who manned the dishwasher all day. I'm not kidding. From 7:00 am straight through 10:00 pm, he kept everything clean and organized. Additional thanks to Stephanie, Len, Cynthia, Michelle, Becky, Robert, Jakob, Naomie, Natalie, and Lucca.
