For those of you who care, I've also posted a little video of how we were able to make 122 full-sized quesadillas in an hour. The video opens with me putting three 'dillas on the first grill and Jakob taking a hot sheet pan to Stephanie and Valery. I then take finished 'dillas from the second grill and give them to Cynthia to cut into 6ths. She puts 12 6ths on a platter which Jakob then transfers to the warming oven. Meanwhile, Stephanie and Valery are putting 3 single tortillas on a hot pan, covering them with cheese and loading them in the oven. Once the cheese is melted Stephanie passes it down to me, I cover it with salsa, top it with another tortilla, put it on the first grill from 30 seconds, flip it on to the other grill and the process repeats. From start to finish a round of 3 takes about 6 minutes. (I couldn't get the video play in Safari, but Firefox seems fine).
